    roasted spiced plums with dulce de leche coffee no churn icecream

    I am obsessed with dulce de leche, who isn’t? its incredible, I think it goes really well with coffee (which I don’t like, weird I know) I made this super simple soft ice cream with just a tin of dulce de leche some cream and I little brewed coffee. even though I don’t like drinking coffee I loved it in this.
    I whipped the cream coffee and dulce de leche until thick then froze it, no need for an ice cream machine and it was the smoothest ice cream I have ever tried.
    I think that dulce de leche doesn’t freeze that well in my experience so it made the ice cream easy to scoop and was really smooth.

    I roasted the plums with some brown sugar, cinnamon and star anise and thyme.
     

    I picked up the Breton biscuits in france but I have seen a recipe here

    ice cream recipe
    1 tin of dulce de leche
    300ml double cream
    50/100ml brewed coffee depending on taste
     
    whip the cream and dulce de leche until thick and add the coffee and fold through until combined pour into tin and freeze over night of for at least 8 hours
     
    for roasted plums
    5 black plums
    4 tbsp. brown sugar
    1/2 vanilla pod
    1 cinnamon stick
     star anise
    2 sprigs of lemon thyme
     
    preheat the oven to 180c 350f
    slice the plums and remove the stones place cut side up in a roasting tin and sprinkle with brown sugar, tuck in the cinnamon stick and place the star anise on top of the plums with the vanilla pod and thyme.
    roast for 35 minutes until soft
    serve warm with a scoop of ice cream and a Breton biscuit or crumble.

      Spiced plums + dulce de leche ice cream sounds like the best combination ever! So unusual, but I love it. The ice cream is calling my name 🙂

      That ice cream looks gorgeous such a lovely caramel colour and it looks super easy to scoop. The combination with the spiced plums sounds like such a great idea. Love this.

      This sounds entirely heavenly! Whenever I buy plums there are always some that are a bit less sweet or mealy and I tend to begrudgingly eat them. I think roasting and serving them with this ice cream instead would be the ultimate redemption 🙂
