    spelt flour summer berry cake refined sugar free

    I went berry picking and got a bounty or summer produce like strawberries raspberries and blackcurrants. The red currants i got from my garden. I love it when you grow something and get to reap the benefits.
    I thought it would be good to make a cake with out any processed sugar so i used maple syrup and honey instead.
    We had so much fun at the pick your own farm it was a great day out
     my partners daughter and granddaughter came. In case you didn’t know my partner is alot older than me so he’s a grandad and his granddaughter Kiki (short for akiri) calls me nanny twig.
    I get funny looks as I’m only 27 and it’s impossible for me to be a nanny lol. Since she could talk that’s what she’s called me and i have been together with him long before she was born so she doesn’t know any different,  I think it’s so cute i love being a nanny twig as i don’t have any children of my
    own.

     

     

     

    My partner Howard daughter bought along her niece praise too. she also calls us nanny twig and grandad H we don’t mind having extra child to spoil.

    Recipe
    4 eggs
    1/3 cup maple syrup
    150g spelt flour
    2 tsp baking powder
    Preheat the oven to 160c
    Whip the eggs and maple syrup until really thick approx 5 minutes them sift in the flour and baking powder and fold in gently.
    Separate between two lined cake tins and bake for 30 minutes
    Let cool
    For filling
    Berries
    2 tbsp honey
    2 tbsp water
    Add the berries water and honey I’m a pan until they pop and there is lots of juice.
    Drain this off into a jug and let cool.
    Once cool whip 300ml double cream and add the fruit juice to add flavour. (You won’t need all of it just add a little and try it to see if it’s got enough flavour)
    Add some of the cream to the sponge then add some sliced fresh fruit then add the second layer and do the same with some more fresh fruit.
    I decorated fruit and with some pea shoots and milk leaves and pea flowers that we picked too.

      Your photos are beautiful…I wish I could reach into the monitor and cut off a piece of that delicious looking cake.
