I originally made this cake for my dad for fathers day and it was a huge hit with every one, as we had a big family meal with my parents and my grandparents and brothers to celebrate. I didnt know what to get my dad so i decided to make him this cake.
I made a strawberry and kiwi compote to go in it and drained off some of the liquid before it reduced to flavour the frosting and drizzle over the cake.
I added some strawberries and kiwi on top to decorate it.
It may of seemed like quite a feminine cake for fathers day being as its slightly pink but he always requested I make him one after I made one a few years ago and I never got around to it so it was a nice treat for him I hope.
It was a great opitunity to use some of the strawberries I had grown in my garden.
(If you know me then that in its self is a miracle as I have never been very green fingered until recently)
Recipe for sponge
150g sugar
150g self raising flour
4 eggs
Preheat the oven to 180c 350f (165g for fan assisted ovens)
Whip the eggs and sugar until thick and pale approx 5 minutes.
fold in the flour gently and pour into two lined tins and bake for approx 30 minutes.
(I find this sponge so easy to make and its easy to remember the recipe tools. it is so light and airy with out adding butter)
For filling
2 large kiwis or three small
Approx 20 strawberries
120g 1/2 cup caster sugar
Peel and slice the kiwis and cut the tops off the strawberries.
Add into a pan with the sugar and 2 tbsp of water and stir over a medium heat until the fruit has broken down and there is lots of liquid from the fruit. Mash with a potato masher and strain some of the liquid off and keep to one side for later. Add the fruit back into the pan (making sure there is still some liquid and continue to reduce until thick then let cool).
To assemble cake whip 300ml double cream with a tub of mascapone and add 4 tbsp icing sugar and add some of the strained liquid to add flavour.
Add some jam to the sponge then add some cream and add the second layer of sponge.
Add the rest of the frosting and using a pallet knife spread around cake. Decorate with some of the fruit.
