I found some banana chip flour in a health store, it is made with ground up banana chips, so I decided to make this banana cake with it in. I used figs, honey, walnuts and blackberries too and it went together really well. I used half self raising flour and half of the banana chip flour to make the sponge and added 2 mashed bananas, chopped figs and walnuts as well as honey and cacao nibs too. I used butter rather than oil and whipped it with some brown sugar first before adding the other ingredients. I really liked the addition of the banana chip flour and would recommend trying it. I used about 3/4cup of it to every 1 cup normal wheat flour, im going to use if for cookies next. if you cant find it then grinding up some banana chips in a food processor until its fine will wok. I bruleed some mini bananas with a blow torch and added them ontop of the cake with chopped figs, walnuts, blackberries and some banana chips and chunks of comb honey
- 2 mashed bananas
- 100g brown sugar
- 2 figs chopped into small chunks
- 200ml honey
- 2 eggs
- 4 tbsp cacao nibs
- 50g walnuts chopped up
- 150g butter
- 250g self raising flour or (3/4 cup banana chip flour 1 cup self raising flour as I did)
- 4 tbsp milk

- 600ml double cream
- 4 tbsp blackberry jam
- 5 tbsp icing sugar
- mini bananas
- figs
- walnuts
- comb honey
- banana chips
- preheat the oven to 160c
- line two 11cm tins with baking paper
- mash up 2 over ripe bananas, then in a mixer beat the butter and sugar, then add the eggs one at a time, add the banana and honey and mix well. add the flours, walnuts and cacao nibs and chopped figs and fold in. to loosen the batter add the milk then divide between the two tins and bake for about 45 minutes. let cool slice so you have four thin layers.
- whip cream with icing sugar and jam until thick then pipe onto cake, spread with pallet knife then brush on some jam with a pastry brush to add the coloured lines and use a pallet knife to make lines up the sides of the cake,
- slice some mini banana in to strips and sprinkle over sugar and brulee with a blow torch add on to the top of the cake with chopped figs, comb honey, walnuts, blackberries and banana chips
