    lemon poppy seed cake with lemon meringue frosting and white chocolate shards

    I made this cake for my mum for her birthday, it has lemon and poppy seed sponge with lemon curd and lemon meringue frosting and it is decorated with crushed lemon meringues, white chocolate shards and some lemon thyme and phlox flowers. it was really yummy every one really enjoyed it and it was really lemony which I love.

    lemon poppy seed cake with lemon meringue frosting and white chocolate shards
    this cake looks quite fancy but its quite easy to make
    Ingredients
    • for sponge
    • 8 eggs
    • 300g caster sugar
    • 300g self raising flour
    • zest of two lemons and juice of half
    • 3 tbsp. poppy seeds
    • ……………………………
    • for frosting
    • 4 egg whites
    • 300g sugar
    • juice of 1 lemon
    • 400g white chocolate
    Instructions
    1. for the cake
    2. grease and line 4 tins two 9 inch one 11 inch and one 6 inch
    3. in a electric mixer add the eggs and sugar and mix until it is pale and very thick.
    4. fold in the flour and lemon juice and zest gently then add the mixture into the tins, (put less in to the two tins that are the same size as the sponges will be sandwiched together.
    5. bake for 30 minutes (the smallest cake can come out at 20 minutes)
    6. let cool
    7. assemble with lemon curd between each layer and use cake dowels to support the cake.
    8. I used two straws.
    9. to make frosting
    10. add water into a pan and bring to steady boil.
    11. add the egg whites, sugar and lemon juice into a bowl and place it on top of the pan, using an electric hand help mixer whip it until it turns into a thick meringue (about 6 to 8 minutes)
    12. using a pallet knife spread onto cakes.
    13. melt the chocolate and spread onto baking paper thinly, once hard cut into pieces and place around the sides of the cake. the decorate with crushed lemon meringue and lemon thyme ad flowers.

      Your cakes are so creative and inspiring and your photography is beautiful!! Im particularly excited about this lemon cake with the white chocolate wall. Something I tried and failed miserably at! So thank you for posting because I will try again. But one question…what do you do with all of these cakes you make?? It seems like you post a new one just about every day! Thanks for your inspiration!

      What a scrumptious cake! I totally love the white chocolate shards, they make the cake stand out. It has a royal feeling to it – a cake fit for a queen maybe?! 😀

      Wow I don’t know really what to say… Your pics are gorgeous and this cake!!!! I wish I had your cake making skills!!!! And lemon frosting with a lemon poppy seed cake annnnddddd white chocolate shards?!!!!! I am absolutely 100% in love!
