buckwheat brown butter banana brownies, lots of words beginning with the letter B make 1 amazing little brownie. they are so fudgy and yummy. I had loads of left over ripe bananas and i was going to make banana bread but decided i make way to much banana bread (i may have a banana bread addiction) so i made these instead and now I’m in love with them. not only are they so easy to make but really tasty. I usually use 1 cup of brown sugar in them but this time I used half a cup and 1/3 cup coconut flower nectar syrup or maple syrup I’m glad I did as it made them even more fudgy and a little healthier.
I used buckwheat flour as it was the first flour I came across in the cupboard, plus I think it goes really well with chocolate I had planned to use spelt flour.
I added nuts and chocolate chips and cacao nibs into the batter I used brazil nuts and walnuts. I love brownies I just don’t seem to make them very often I don’t know why, I will definitely be making them all the time now as I always get given black bananas to use up from my family so its great to have another banana recipe up my sleeve.

- 100g butter browned in a pan
- 1 egg
- 3/4 cup buckwheat flour approx. 120g
- 1 cup (220g) brown sugar or 1/2 cup (110g) and 1/3 cup coconut flower nectar or maple syrup or honey
- 1/2 tsp baking powder
- 1/3 cup cocoa powder
- 1/2 cup chocolate chips
- 50g chopped nuts
- 3 small or 2 large over ripe bananas
- pinch of salt
- 1 tsp vanilla extract
- 4 tbsp cacao nibs
directions
preheat the oven to 180c 350f and line a 20cm by 30cm tin with baking paper
in a pan add the butter and stir until it has melted then let it turn brown (about 3 minutes) let cool. note it needs to be real butter not half vegetable spread ect
in a bowl mash the bananas and add the egg and vanilla
sift the flour, baking powder, salt together and set asside then add the butter to the banana mixture and mix together then add the dry ingredients. finally add the chocolate chips, nuts and cacao nibs and pour into the tin and spread out and bake for about 25 minutes
let cool dust with icing sugar and slice.
