the smell of the rosemary roasted plums made the house smell incredible, I decided to have them with some gluten free waffles. I used a recipe from our food stories I love their blog its packed with beautiful recipes.
I don’t often make big breakfasts so when I do its really special, plums are in season at the moment so they are perfect to use and they go really well with cardamom and rosemary and honey. even my dog archie wanted to have some he’s a cheeky monkey.
I decided to use honey as a sweetener for the roasted plums to make it a bit healthier.
waffle batter (adapted from our food stories)
- 300g brown rice flour
- 150g un salted butter
- 150g caster sugar
- 3 eggs
- 1/2 tsp baking powder
- 100ml milk
- 1/2 tsp vanilla extract
- Seeds from 5 cardamom pods ground with pestle and mortar
- 1 tsp ground ginger
Mix the butter and sugar together with the vanilla extract then add the eggs one at a time , then add the milk and mix finally sift in the flour, baking powder and ground cardamom and ginger and a pinch of salt. Mix well and cover and let rest for a 20 minutes then cook in batches in a waffle machine for 2 to 3 minutes until golden
Pre heat the oven to 180c 350f
Slice plums and remove stones and drizzle over some runny honey and place two sprigs of rosemary on top and bake for 15 minutes until soft
Serve warm with some honey and the roasted plums
