    white chocolate ginger tiffin

    This ginger and white chocolate tiffin is so easy to make and it went down so well at home, my partner howard loved it. its great to whip up an easy no bake treat sometimes so this was great. all you need is some white chocolate, ginger biscuits (cookies) some candied stem ginger, golden syrup, butter and some pecans and pumpkin seeds and it takes no time at all to assemble. I love ginger nut cookies so I knew I would like this. I think it would work great with dark or milk chocolate too.

    I made the spoon and little bowls with some air dry clay then I glazed it with some varnish so they are clean (for props)

    recipe

    • 600g white chocolate
    • 1 packet of ginger nut cookies
    • 20g candied stem ginger cut into chunks
    • 30g pecans chopped plus more for the top
    • 4 tbsp. pumpkin seeds
    • 125g butter
    • 2 tbsp. golden syrup
    • 1 tsp of ginger syrup from a jar of stem ginger in syrup (optional)
    in a pan gently melt the white chocolate and butter with the golden syrup and ginger syrup (don’t over heat it or the white chocolate will separate)
    crush the packet of biscuits and add most of them (reserve some for the top) and stir in then stir in the pecan, pumpkin seeds and candied ginger and pour into a lined tin and press in I used a 15cm tin, then add the left over biscuits and pecans and leave to set, dust with icing sugar then just slice and enjoy.

      This looks delicious! I have never made anything similar. It looks like a mix between nougat and fudge. Have to try it once!

      I’ve never seen white chocolate tiffin before, what a brilliant idea! I bet it tasted amazing with the ginger, it’s a perfect combination 🙂
