these carrot cake waffles where so tasty, I made them in my new waffle machine from sage appliances. I made them just in time for international waffle day on the 25th march. I topped them with some honey sweetened mascarpone and some walnuts. I really loved this sage by Heston waffle maker as it has different settings for different waffles and you can choose how brown they are, and its design is great and goes well with my kitchen. are you going to make waffles for international waffle day? if these don’t temp you what is your favourite flavour?.
recipe makes 4
- 1/2 packed cup grated carrots about 2 (I squeezed out most of the excess water)
- 1/3 cup light brown sugar
- 2 eggs
- 1/4 cup olive oil
- 1 cup self raising flour
- pinch salt
- 1 tsp cinnamon
- handful of walnuts chopped
heat the waffle machine, meanwhile mix together all the ingredients to get a batter then brush some oil onto the waffle machine and add some of the batter and cook for about 2 minutes, I then mixed two tbsp. honey into a cup of mascarpone to serve.

What a great idea for waffles. I make waffles almost every weekend. I’ve added bananas, yogurt, fruit and made them with corn. I’ve never tried brown sugar and carrots! I can’t wait to make these! Gorgeous photos too 🙂
