    hotcross bun bread pudding 4if you have left over hot cross buns and you are wondering what to do with them then why not try this bread pudding, I made some homemade marmalade to go with it with some blood oranges, pomelo and cardamom. I added some chocolate chips too, it was really yummy. shop bought marmalade is great too.

    jam

    • 5 blood oranges
    • skin from 1 pomelo
    • seeds from cardamom pod
    • 1 cup of preserving sugar
    • water as needed

    peel the oranges and cut the skin into thin strips and cut the skin part of the pomelo into thin strips too, grind the seedsĀ from the cardamom pods with a pestle and mortarĀ then add in the pan with the juice from the oranges and a cup of water. reduce for an hour, then add the sugar and more water if needed and cook for another 25 minutes. store in a jar in the fridge.

    • 6 hot cross buns
    • 50g chocolate chips
    • 5 eggs
    • 115g 1/2 cup caster sugar
    • 310ml milk 1 1/4 cup
    • 250ml double cream
    slice the buns and spread the marmalade on then place back together and put in a baking dish then, mix the eggs, milk, sugar and cream in a bowl and pour over the buns let soak in then pour over the rest, finally sprinkle over the choc chips. bake for 25 minutes until the edges are set and there is a slight wobble in the centre.

      Looks great! Have you ever tried cutting the buns into smaller pieces? Do they soften all the way through even this way?
