grilled corn on the cob with sundried tomato basil and garlic butter with parmesan

I love corn on the cob, I usually just boil it with butter, so this time I was a bit more adventurous and cooked it under the grill with some butter flavoured with basil, garlic and sundried tomatoes and then I grated on some parmesan. the sundried tomatoes gave it a Mediterranean flavour that I really enjoyed. the topping possibilities are endless really, I had also thought of an Asian miso butter with sesame seeds, maybe I will try that next time. I have been really enjoying trying out more savoury recipes recently rather than just doing sweet recipes, I hope your enjoying it too.

    • 6tbsp. butter
    • 5 basil leaves
    • 3 sundried tomatoes
    • 1 small clove or garlic
    • salt and pepper
    • parmesan cheese

in a food processor add the basil and pulse then add the sundried tomatoes and garlic and pulse again then add the butter and salt and pepper and pulse until the butter is smooth.

turn on the grill and peel back the corn husks and remove the silk and tie the husks off so you can use them as handles then put under the grill for 2 minutes. brush on some of the butter and put back under the grill for another minute, turn over and brush butter on again, grill for another 2 minutes. then turn over and brush on more butter and grill again for another 2 minutes on each side. while this was grilling I heated up a griddle and then placed the corn on for 2 minutes each side to char it. brush on some more butter and grate on some parmesan and eat straight away.

Unless its fresh harvested summer corn on the cob, I generally won’t eat it unless of course you top it with yummines like this! Happy feasting!

Look, I don’t expect this to go up but your grammar is terrible. My 14 y/o cousin and I were looking at the cake ideas when we picked up on it. I’m thirteen and had no trouble picking out at least 3 errors every paragraph, I don’t know if it is intentional or not but it is exceedingly frustrating to see.

      Regards, C&S.
