    salty chocolate truffle tart with berries

    I had the most amazing weekend with lucy from supergolden bakes and we made this delicious salty chocolate tart with berries. It was really decadent and went perfectly with some pink blueberry salt that I got in Iceland. We made the crust with some chocolate chip shortbread cookies that we blended in a food processor, we added cocoa powder and melted butter and pressed it into the tart dish and put it in the fridge to firm up, the ganache was made with cream and chocolate so there was so baking involved. Its so easy to prepare. 

    I love it when desserts can be made so easily, my partner said it was so amazing. The filling firms up really well and makes it easy to slice. The berries add a nice fruity taste but if you prefer you can leave them off or swap them for something else. It’s basically like chocolate truffle mixture poured into a tart case so it is quite a naughty treat so I would suggest just a small slice. The salt is important as it works really well with the sweetness. You don’t need to use fancy salt like we did though, any normal flaked salt will do.

    to make it

    • 100g melted butter
    • 250g crushed chocolate chip shortbreads or digestive biscuits (we used these)
    • 3 tbsp. cocoa powder
    • pinch of salt

    filling

    • 300ml double cream
    • 300g chocolate (we used 150g milk chocolate and 150g dark chocolate)
    • 2 tbsp. butter
    • 1 tbsp. honey

    In a food processer add the biscuits or shortbreads and process until it resembles a fine crumb, add the cocoa powder and salt and mix. Pour in melted butter and mix then press into tart shell and put in the fridge to firm up,

    Finely chop chocolate then in a pan add the cream and bring to the boil then add the chocolate and stir until it is melted. Then add the butter, and honey. Pour into tart shell and chill for 25 minutes until the ganache hardens then add the berries, some shaved chocolate and thyme and sprinkle over some salt.
