Strawberry galettes are a quick and easy way to use up the abundance of fruit that is around at the moment. I added some thyme and almond extract in to the pastry for more flavour. These little tarts where so tasty especially still warm with a big scoop of vanilla ice cream. Galettes are really easy to make and a great way to use up pastry if you have any left over from another recipe too. I always find that strawberries remind me of summer don’t you ?.

- 220g spelt flour
- 50g ground almonds
- 120g unsalted butter
- 1 tsp almond extract
- 2 tbsp. fresh thyme leaves
- 4 tbsp. golden caster sugar
- pinch of salt
- 1 egg
filling
- Strawberries about 3 cups
- some ground almonds about 3 tbsp per tart
- golden caster sugar
- vanilla bean pod
Add the flour. Sugar, salt and almonds and thyme in a food processor then add the butter and pulse a few times to mix then add the almond extract and egg and mix again, if you need more liquid add an egg york or a few tbsp of cold water and mix again until it comes together. (You May find you don’t need any extra liquid)
Cut strawberries into slices. Roll out pastry and sprinkle on some ground almonds on the pastry in the centre. Cut a vanilla pod and remove seeds mix with strawberries and place strawberries on top of the almonds and sprinkle on some sugar I added about 2 or 3 tbsp on each one . Then fold up the edges of pastry and brush with a beaten egg and sprinkle on some flaked almonds and then bake at 180c for approx 35 minutes until golden. Serve them still warm with some vanilla ice cream.
If you are not a fan of thyme then you can leave it out.
If you dont have any spelt flour then you can use plain flour instead.
