my partner and i love danish pastries and we often buy the cinnamon danishes from the bakery but i decided to make my own and im so glad i did as they were amazing.
the dough takes a little time to make but the process is not difficult it just requires alot of folding and resting time so i would suggest making the dough the evening before you need it.
my partner asked for a lemon drizzle icing which actually made these great pastries even better.
recipe for the dough
makes 8
(2 cups)250g strong white flour
1 tsp salt
(just less than 1/4 cup) 40g caster sugar
1 sachet of active dried yeast
1 egg
45ml tepid water
65ml milk
half a block of butter (250g block)
in the bowl of a stand mixer add the flour, sugar, salt and yeast, then add the egg, water,
add the milk while the dough is mixing. knead the dough for approx 6 minutes.

tip out on a floured surface and roll into a ball and place in a clean dry bag in the fridge.
take the block of butter cut in half and place it between two sheets of baking paper and hit it with a rolling pin to flatten it into a rectangle.
take the dough out of the fridge and roll out into a large rectangle then place the flattened butter in the middle and fold the dough over it, turn it then roll out again and do the fold again, follow these steps twice more, cover with cling film and place back in the fridge for 1 hour,
then roll out the dough and fold again twice more and return to the fridge for half an hour and then fold again twice, then let rest in the fridge for at least 8 hours or over night.
recipe for filling
3/4 cup butter
1/2 cup brown sugar
3 tsp Cinnamon
2 tsp icing sugar
melt the butter a little so its still thick and not to runny then add the sugar and cinnamon and icing sugar then mix it all together.
roll out the dough into a large rectangle and spread on the filling
roll each side in to the middle then cut into slices and place onto a lined baking tray and leave to prove for 2 hours or until doubled in size.
preheat the oven to 200c brush some beaten egg on to each pastry and bake for 15/20 minutes
for the lemon drizzle mix 2 tbsp lemon juice and 1 tsp lemon zest with powdered sugar until it forms
a nice runny icing and drizzle over.
